4-Ingredient, Guilt-Free Cookies? Count Us In!
We could hardly believe when we tasted these delicious Peanut Butter Cookies that they contain only four ingredients – satisfy your sweet tooth without sacrificing healthy eating habits!
250g smooth peanut butter
100g Xylitol or other natural sweetener
1 egg (or egg replacer)
1 teaspoon vanilla extract
Preheat oven to 180°C and line two baking sheets with parchment paper.
Combine all the ingredients in a large bowl and mix until a dough is formed.
Roll dough into small balls about 2.5cm diameter. Place onto baking sheets, 5cm apart, then flatten lightly with the back of a fork, leaving a striped indentation.
Bake 12 to 15 minutes, rotating baking sheets halfway through cooking time. Remove from oven when edges are golden. Cool for a few minutes on the sheets, then remove to a wire rack to cool completely.
