Our New Snack Obsession

Written By Joseph Jackson 13 Feb 2020

Whip up these moreish sweet potato crisps next time you feel peckish – in 10 minutes you’ll have a healthy snack that satisfies a sweet tooth, a salty tooth, a spicy tooth…all the teeth!

Our New Snack Obsession

1 large sweet potato, peeled

A tablespoon or so of mild-flavoured oil of your choice (such as sunflower oil or melted coconut oil)

¼ teaspoon each:

paprika (sweet or spicy, depending on your taste)

pink Himalayan salt

coconut sugar

Preheat the oven to 180°C. Using a mandolin slicer or a sharp knife, cut the sweet potato into very thin slices. Toss lightly with oil just to coat. Spread the slices onto two baking sheets in a single layer.

Bake for five minutes, or until edges just start to turn golden brown, then turn and bake five more minutes, taking care that the slices don’t burn.

While the crisps bake, mix the spices together in a small bowl.

Remove the crisps from oven, cool slightly on the baking sheets, then transfer to a bowl and sprinkle over the spice mix. Try not to eat all at once at the kitchen counter!
