Ingredients:
1 large shallot or half an onion
2tbsps olive oil
1 clove of garlic
large handful of finely chopped vegetables (we use green pepper, broccoli and grated courgette)
400g tin of butter beans (drained and rinsed)
1tbsp brown rice miso
1tsp bouillon (if you like some extra saltiness in your dish)
handful of chopped parsley and chives
juice of half a lemon (add a little extra if you like)
Process:
-
Your culinary journey begins with step one: finely chopping shallots or onions and sautéing them in the fragrant embrace of olive oil until they attain a delightful caramelization, creating a savory foundation for your dish.
-
In step two, introduce the minced garlic, along with a medley of your favorite vegetables, allowing them to simmer harmoniously for five minutes. This aromatic symphony sets the stage for a robust and flavorful experience.
-
Step three invites the star of the show, butter beans, to join the ensemble. Add the rich notes of brown rice miso, the savory depth of bouillon, and the freshness of chopped herbs. A half cup of water unites these elements over a medium heat, creating a melody of flavors that dance together in the pot.
-
As you stir often, patiently awaiting the crescendo, the sauce begins to thicken (typically within 5-10 minutes), reaching a harmonious consistency that coats each butter bean in deliciousness.
-
Step five brings the finale: remove the pot from the heat, introduce a burst of citrus with a squeeze of lemon juice, and prepare to serve this symphony of flavors. Whether enjoyed on its own or paired with crusty bread, your creation is a culinary masterpiece that promises to delight the senses and satisfy the soul. Bon appétit!
